The food industry new entries presented during Cibus 2014
Home cooking is an increasingly popular hobby among Italians, whose demand for organic and healthy food is steadily growing: in order to meet their needs, the food industry has created new products.

Home cooking is an increasingly popular hobby among Italians, whose demand for organic and healthy food is steadily growing: in order to meet their needs, the food industry has created new products. The perfect platform for their launch is the 17th edition of Cibus, the Italian food fair, in Parma from the 5th to the 8th May. After years of recession in the Italian market, compensated from an export boom, the 2600 Italian companies present at Cibus have reacted enthusiastically to the demand of new products for both Italian and foreign markets. The products will be exhibited at Cibus and later on at the "Federalimentare4EXPO2015" exhibition hall at EXPO 2015 (World's Fair to be held in Milan in 2015). The hall will be sponsored by Federalimentare and Fiere di Parma and will host 500 Italian food companies that will showcase tradition, history, production and environment awareness. It is not possible to list the hundreds of new products being exhibited for the first time at Cibus 2014. A selection of hundred of these products have been published on the 28th April on the site http://www.cibus.it/ under the title "Novitá di prodotto – Le aziende informano" (New Cibus Product Guide: News from the Exhibitors). Below are some extracts that show the current market trends. NEW PRODUCTS FOR HOME COOKING Those who are into healthy food, but have little time to cook, can follow the 7 recipes of the famous chef Vissani that take only 2 minutes to prepare and include wine suggestions. An example is the Tuscan crespella (a sort of pancake) filled with black cabbage and decorated with banana and red curry sauce (Gastronomia Toscana). Cooking fans have plenty of choice amongst the following: balsamic vinegar cream from Modena with tabasco sauce to be used with fish or meat (Fini); pearls of balsamic vinegar from Modena for the kitchen (Mengazzoli); bouillon cubes with flavours as tomatoes, red pepper, spinach, shrimps (Fattoria Italia); fresh pesto sauce from Genova with with truffle (Tab GreenLine); pesto sauce made of broccoli and dried tomatoes from Puglia (Costaligure); sweet date tomato sauce (Mutti). For gourmets one can choose among a 2 new package of five culatello ham bites, easier to serve (Terre Ducali); cooked culatello ham from Pianure Padana pork (Ibis Cremonini); truffle base for sushi (Urbani Tartufi). Other products are the parmesan spread that can be used on food or, simply, on bread (Parmareggio), and the fresh delicate parmesan sheets in plastic package to be used on pasta, carpaccio and salads (Nitti Ferrari). Baking a pizza from home is easier with the DYI kit offered by Maestri Pizzaioli that provide detailed instructions including how to use the oven (Sapori Antichi). New products can be found as well in the frozen section with mozzarella slices ready for use (Alifood) and truffle-flavoured gorgonzola (Selektia Italia). The confectionery section proposes coffee pearls to use on ice cream as well as in the kitchen (Taurocaf), and the "spheremaker" kit for desserts: any liquid will be turned into spheres by a process that uses natural products and is perfect for dessers and molecular food (Fabbri). A coffee different than the usual Italian espresso is possible with the capsules coffee maker that makes an American coffee (Segafredo Zanetti). NEW HEALTHY FOOD It is expected that healthy food will stand out at Cibus 2014: several stands will feature organic food such as organic eggs from cereal-eating chickens in controlled supply chain (Alce Nero); gluten-free and sodium-poor pasta made of organic rice from sustainable agriculture, (Riso Viazzo); organic savoiardi finger biscuits (Lanaittu); organic piadina flatbreads (Natural Food); organic apple puree (Ad Chini), organic truffle butter (Calugi);oil-free sauces for side dishes or small bites (Ponti). Healthy food is more than organic food, of course, with producs such as lactose-free butter (Dalla Torre); lactose-free robiola soft cheese and lactose-free goat cheese (Latteria Montello); sodium-poor bresaola dried beef (Venus Paganoni); grissini bread sticks made of spelt flour and cereals (Grissin Bon); sugar-free, zero-calories chinotto soft drink (Neri); ragu' tomato sauce from Bologna made of soya and vegetables and a pesto sauce containing Tofu (Biffi); pasta prepared with spa water directly pumped from the source (Delverde); spaghetti made of organic Turanicum wheat, an ancient gluten-poor wheat variety (Mancini). The confectionery section includes a kit to make home-made, sugar-free jams by using Stevida sweetener (Novarese Zuccheri); ice cream sorbet full of fruit (Valsoia); frozen emifreddo dessert with gluten-free croccante almonds' cream (La Donatella). The drinks section offers fruit juices mixed with milk (Parmalat). For children there is a new product as well, developed by nutritionists, containing a parmesan cheese snack, grissini bread stick and milk shake (Parmareggio). For fans of "super food", with concentrated essential nutrients, there are raw bars of dried fruit and nuts and breafkast cereals made of sprouted buckwheat and dried fruit (Ambrosiae). OTHER PRODUCTS Besides home cooking products and healthy products, there are new products in any other department as well.
The bakery section, for example, includes the mini focaccia breads as a one-person snack (Barilla) and new sorts of soft bread, grissini bread sticks, crackers and tarallini snacks made of wheat, durum wheat, Kamut wheat or buckwheat (De Cecco).
The oil section includes organic oil in "bag in box", a package with built-in tap that doesn't rust, historically used for wines (Frantoio D'Orazio Picicco); extra virgin oil spray that reduces waste (Limoni Sicilia); vinegar sauces with flavours as balsamic vinegar, orange and lime, dried tomati\oes and onion and shallot (Monini) and oil-based cosmetics such as hand cream, body lotion, shower foam and so on (Monini).
The cheese section includes fresh cheese spread made of milk cream (Strakì Sterilgarda) or made of lactic ferments and calcium (Galbani). Other novelties include: vegetable soups in a glass, from carrot soup to mashed minestrone (Euroverde), frozen pre-fried panelle (traditional Sicilian fried snack made of chickpea flour) easy to cook (Cgm), camomile tea that dissolves in plain mineral water (Rocchetta). Last but not least, a new Dop product (protected designation of origin) will be presented at Cibus: the Puzzone di Moena cheese (Consorzio Trentino).
